Smoked Turkey Stock Risotto

Made risotto tonight with stock from the freezer.  The stock was made from the carcass of a turkey I smoked last summer.  Great use of a very full flavored stock and I found it really needed nothing more than some salt and pepper added.  I need to learn more about making risotto well.
